According to UK Finance's UK Payment markets summary 2021, in 2020 over ¼ (27%) of all UK payments were made by via contactless methods. Compared to 2016, where only 7% of all payments made in the UK were via contactless.

It seems to be that people also prefer the convenience of contactless payments, as well as the fact they are at less of a risk of catching COVID through pressing card machine buttons or handling dirty cash.
